June has brought us our first tours & rentals. Yipee!

Everyday seems filled with more possibility than we can really handle – opportunities present themselves with ABUNDANCE these days.

I have all but abandoned my poor blog, but I re-vow to get back at ‘er. Here’s a peek of what’s been on lately to hold you over…

We’ve gone totally gone GAGA for Garlic Scapes. I say ‘we,’ but really, it’s just me. I tried to stop myself, but that wasn’t worth my time or effort. I now have enough pickled garlic scapes to satisfy an Italian army and enough pesto to hold us till hell freezes over. This weekend, we finally clipped off the last of the curly-Qs.


 

Farm Dog Garlic Scape Pesto

Like most of my “recipes” this is more of a suggestion than a list of instructions. Feel it out – add more lemon juice or oil to adjust the consistency. This stuff’ll get your immune system up to snuff – which is important if you’ve been working hard, even in the summertime!

1/2 cup sliced almonds
1-1/2 cups roughly chopped fresh garlic scapes
a big handful of basil leaves
1 Tbsp lemon juice
Olive Oil or Cold-pressed Canola oil
Salt & Pepper to taste

Toast almonds – I do this on a tray under the broiler. You know nuts are toasted when you start to smell them, but watch out – they’ll go from perfect to burnt in a matter of seconds!
Let them cool for a few minutes.

Toss your scapes, basil and nuts in your food processor. Pulse it a few times to get it cut down, before turning on and adding lemon juice. Drizzle in oil until you reach your desired pesto consistency. Add S&P to taste, and give it a few more whirls to mix.

I store my pesto in jam jars in the fridge, or freeze in small tupperwares.

It’s just starting to really feel lik20120611-212015.jpge summer. Not the weather, but that gut instinct that tells you it’s OK to eat ice cream everyday and stay up too late and wake up too early with the sun. It’s that coming out of hibernation feeling; that gnawing urge that you should spend every waking hour outside. I can’t get enough – which is good because it’s also the time of year where we can’t dream of keeping up with the pace of farming!

And yes, there have been a few early mornings. Liam and I have been riding as much as we can, and it feels good to stretch the old legs a few days a week, and eat like athletes again. Or, continue to eat the way we usually do – but look a little more like athletes :) Farm Dog Rides have been gaining some serious momentum – and we’d love to have you join us! We ride at 6:30 every Thursday from the lights in Harrow, and offer a beginner-friendly/rec ride for those just getting into road-riding as well as a ‘fast’ ride for the more serious.
